Carrageenan, also called carrageenin, are a family of natural linear sulfated polysaccharides, are extracted from red edible seaweeds. It’s a high molecular weight polysaccharide extracted from red seaweeds, composed of D-galactose residues linked in β-1,4 and α-1,3 galactose-galactose bond.
Carrageenan is a food additive used in various food products as a stabilizing and emulsifying agent, can serve a structural function with other gums.
Raw materials for carrageenan-kappa is EUCHEUMA COTTONII, mainly imported from Indonesia, Philippines and Solomon.
